What Happens After I Get The Keys To My Pub?
So, after all the pondering, planning and paperwork, the day is finally here and you’re handed the keys to your long-awaited pub. You’re probably feeling a bit daunted at this point (perfectly natural), but we’d put money on the excitement winning out. You’ve got big plans, a warm welcome ready and a bar full of locals just waiting to get to know their new landlord. So, what next?
Do I Just Get On With It?
Not yet. Getting the keys is a big milestone but before you step behind the bar for your first service, there’s still a fair bit to do to get you ready. By now you will have had your four-day Franchise Welcome. From this point, Greene King’s Marketing team will work closely with you to shape your business plan into something practical and ready to go. They’ll help you map out your first 12 weeks of trading, scoping everything from your events to your social media activity so you’re not left staring at a blank page wondering what to post. They will also make sure all the printed essentials are in place, from menus and point-of-sale materials right down to the smaller details that are easily overlooked when there’s so much else going on.
Will I Get Hands-On Training In My Pub?
Now the keys are in your hand and you’re standing in your very own pub, things are about to get exciting. From this point, Greene King Pub Partners will support you with a detailed in-pub training plan, designed around whichever franchise option you’ve chosen: Nest or Hive. Ahead of launch, you’ll be invited to join a Teams call where you’ll be introduced to the trainers who will support you through your handover and launch period, so you know exactly who to turn to from day one.
Our dedicated trainers will then join you in the run-up to your pub’s opening to help show you the ropes. If you’re a Nest franchisee, you will have a five-day training plan - receiving your keys on Monday and opening your doors to the public on Friday. Here’s how those days break down.
Day 1 is all about the essentials - licensing, standards and service expectations. Your first deliveries will start arriving, so it’s straight into dealing with stock from the off.
Day 2 is pub building day. You’ll stock the shelves, get your displays up and make sure your menus, A-boards and glassware are all in the right place. The Marketing team will also be on-site to cast a trained eye over everything and make sure nothing’s been missed.
Day 3 will see you joined by a Zonal Support Trainer who will work through all the practical essentials with you and your team, including pulling the perfect pint, nailing your serves, till training and cash management. They will also help you get comfortable with your internal platforms and ordering systems.
Day 4 is when your Business Development Manager (BDM) will join you. Any outstanding building snags will be sorted and top-up orders will go in. The evening brings your first real test - a friends and family soft launch from 4pm-8pm. Think of it as a dress rehearsal; a chance to get a feel for service in a warm, forgiving environment. This is a great opportunity to iron out any wrinkles before your main launch.
Day 5 is the big one! Launch day. A gentle midday opening to ease you in, with your Zonal Support Trainer and BDM there to support you. Then it’s ribbon-cutting time and a grand launch at 5pm.
I’ve Chosen A Hive Pub - Is The Training Different?
There is overlap but as our Hive Pubs come with a broader menu and are a larger operation, your training plan extends to nine days. This means you’ll get the keys on a Monday and open the following Wednesday - giving you more time to learn the ropes. Two trainers will be with you throughout this period, helping you prepare for launch. Here’s what you can expect across those nine days.
Days 1 and 2 follow a similar pattern to Nest - team welcome, deliveries and building the pub.
Day 3 is a day for the chef whites, as it’s a full cooking day. The back of house team work through the entire menu, preparing every dish and serving it to the front of house team. Meanwhile, front of house gets stuck into making drinks and familiarising themselves with the tills on training mode.
Day 4 brings your BDM and both trainers together for a ‘ready to trade’ meeting. The kitchen will continue refining their prep and the menu items and the Marketing team are on-site checking every detail is in place.
Day 5 is about back-office management in the morning and front of house till training in the afternoon.
You will then get a well-earned weekend off. Time to breathe, process and come back fresh.
Day 6 is a highly service-focused day that will bring your front and back of house teams together. How will you work as a team when the tickets are flying? What’s the most productive flow? These are the questions you’ll work through and answer together.
Day 7 is ‘dry run day’. Local guests are invited to sample your menu between 12-2pm and friends and family take over in the evening from 6-8pm. Once the last of the guests have left, you’ll sit down with your trainer for an honest post-shift debrief to discuss what landed, what didn’t and what to polish up before opening day.
Day 8 is opening day. A light-touch midday service, then your full launch at 5pm. After that, your BDM takes the lead and is on hand for the next few days to support you as you find your feet.
